How can I find out how many gallons my fresh, black, and grey tanks hold?

It's in the manual I believe. If you don't have a manual, you could always measure what you put in to fill or measure what comes out of a full tank.

My 2007 17ft HiLo has 36 gal fresh water (includes 6 gal water heater), 30 gal grey and 17 gal black. Those are fairly standard sizes in the later models.

On mine the black and gray are switched, I have a bigger black tank.
