Bathroom redesign ideas?

We have an '87 Funmaker, which has been nothing but a delight. It's completely period correct and in pretty good shape. The biggest problem we have discovered is simple storage space when camping.
The (looking toward the back, left to right) shower/vanity/toilet seat/storage design seems insanely wasteful.
First, do you really need a vanity and sink. The kitchen sink is almost within reach. Second, the storage next to the toilet seat is all but useless unless you want to put boxes or bags on top of it. The openings are too small (thanks toilet!) be be useful.
I'm considering ripping out the vanity, moving the shower controls to the shower, as well as ripping out the toilet itself. I'm thinking a stand-alone self-contained toilet could sit quite comfortably on the floor of a slightly larger shower. This would mean you have the whole area where the vanity, toilet and storage box are currently to re-think. And by removing the toilet you could cross pipe the black and gray water systems, giving you more storage for gray water. Currently the gray water tank is much smaller than the water tank, and you would be using the canister on the portable toilet for holding. (We typically are in Forest Service or BLM campgrounds, what we call boondocking with toilets, and rarely use the toilet in the trailer.)
Has anyone done any modifications/redesigns on this part of the trailer?
Thanks,
Mark
