Easy Omletts for a crowd
This is my fave when there is a crowd. Works well for picky eaters and those that eat at different times.
You will need a box of freezer zip lock bags. 1 quart size. THEY HAVE TO BE FREEZER BAGS! Set up a buffet style table with any ingredient you can think of for an omlett. We usually prepare our ingredients ahead of time in plastic bowls with lids or ziplock bags. crack 2 eggs into a freezer bag and add any ingredient you like to it. squish it up to mix. Try to remove most of the air and zip it up. Use a permanant marker to write your name on it. Drop into boiling water for 17 minutes. The most perfect omlett will form in the bag. Just dump it out on a plate and wala! We have a burner with a pot of water boiling at the end of the table and a kitchen timer. You can boil about 6 bags in a regular soup pot. The larger the pan the more you can cook. We usually have a person manning the pan, timer and removing the bags with tongs. People love doing this and are amazed at how they turn out. You can add side dishes to the table if you like, but the omlett is usually enough. Of course there will be a big eater that will ad more than 2 eggs, you have to cook those a little longer. And if you use an ingredient that has alot of moisture, like tomatoes, you may have to cook a little longer. If you cook extras they heat well in the microwave. Store them in the frig in the bag and then throw it in the microwave to heat. We usually will cook up the left over ingredients and eggs for the late arivers, a snack later, or breakfast the next morning. |
You'd eat food that was cooked in a ziploc bag?
Aren't you concerned about the plastic compounds leaching into your food? |
Nope not worried, can't be any worse than the aluminum in the beer cans, perservitives in foods or the cigaretts I smoke.

i love these omelets too!!
they are great i suggest you stick to "ZIP LOCK" brand freezer bags had problems with off brands we use a plastic cup to put the bag down into and fold over edge easier to hold while filling cup doesn't get dirty and you can reuse i never use more than two egg and cook exactly 13 minutes never longer in rapidly boiling water cubed cheese works much better than grated and never use tomatoes i changes the texture too much with that said any other veggie works good.... raw chopped small..green onions...peppers, broccoli ect pre cooked crumbled bacon.cubed ham, sausage hamburger ect this can all be pre cooked and brought with you to camp squeeze out as much air out of the baggie as possible before sealing... squishing with fingers.... and cooking when cooked cut across the baggie above the omelet and he omelet will roll right out of the bag onto the plate try one these at home first then let your imagination run wild i have my guest at home or camp write their name with a perment marker on a biggie fill their bags the night before ..keep chilled then in the morn all you do is boil water i have served 26 people this way again try these at home |
Those famous omelets are a favorite in my Boy Scout Troop , we call them the boil -n-bag breakfast and the boys love them, some add as many as 3 or 4 eggs depending on how hungry they are and a trick is to squish around the bag 1/2 way during cooking to evenly cook the egg product and add the real shredded cheese at the end to melt into the omelet. we tryed imitation cheese and it clumps to we make sure it is the real thing.

Lisa, What is the average elevation where you go camping? Or, putting another way, on cake boxes, do you follow the regular cook times, or the altitude times? I'm asking because I REALLY want to try your recipe, but need to adjust the boiling time for our 3500 ft. plus elevations here in Idaho. Normally we guesstimate our cook time increases, but you state pretty specifically that the bag needs to boil for 17 minutes. We want our omelette to also be perfect! :) Thanks, Jim |
2 eggs at 13 minutes
try these at home you'll see
i believe 17 minutes is way too long and use cubed cheese and two eggs try one at 13 minutes and leave another in for 4 minutes longer and post which one seems better post back on results |
one last thing
with two eggs only squeeze egg bag once before boiling
no need for more squeezing while cooking be sure to bring water to a full rolling boil you can always make two omemlet for the extra hungry |
we always coom them until done, uncooked eggs are yecky and the boys won't eat them
