I am the proud owner of a 2000 17ft Towlite Hi-Lo, I bought a week ago and have not got a chance to take it camping yet.
Being at the VA/WV state line, I have a lot of choices.
This is my first camper. I was amazed at how easy it towed home because I was scared to death, because I had never towed before. Furthermore, I love how my MPG don't drop much either. I towed it with my 2017 Jeep Trail hawk and avg. 18 MPG.

I am looking at changing things up inside of it. I will post pictures when I am not at work.

All kinds of advice welcomed/

Welcome to the forum, and congrats on your "new" camper! There is a bunch of information in this forum about HiLos and you should spend a good deal of time looking through it. In particular, the videos found in Post #3 in this thread: https://www.hilotrailerforum.com/f49/hilo-video-owners-manuals-youtube-1233/ are well worth your time. Don't be put off by the first one, which just seems like an ad of HiLos, the rest are very valuable.

I have the same trailer, although it's a bit newer. Still, HiLo made very few changes through the years, so I suspect I can give you some worthwhile advice on yours.
